**** THIS POSITION IS FOR HOTEL CASA DEL MAR*****
THE SOUS-CHEF IS RESPONSIBLE FOR RUNNING ONE OR MORE OUTLETS, WHICH INCLUDES ALL PREPARATION THEREIN. MAINTAIN ESTABLISHED QUALITY STANDARDS. PROMOTE TEAMWORK AND MORALE. ENSURE PROPER SANITATION AND SAFETY PRACTICES IN THE KITCHEN. MAINTAIN AND CONTROL PRODUCTION OF FOOD. REPORT ALL ACTIVITIES IN THE KITCHEN DIRECTLY TO THE EXECUTIVE CHEF.
MAJOR RESPONSIBILITIES
* BE A TRUE TEAM LEADER BY EXAMPLE, CONTINUALLY EMPHASIZING DAY-TO-DAY COMMUNICATION SKILLS AND COMMITMENT TO THE HOTEL CASA DEL MAR SERVICE TO OUR GUESTS.
* NEED TO HAVE ENOUGH FLEXIBILITY TO RESPOND TO ANY CALLS FROM HOTEL, ANY DAYS, ANY HOUR.
* BE TOTALLY ACCOUNTABLE AND RESPONSIBLE FOR THE RESTAURANT KITCHEN
* RESPONSIBLE FOR THE TRAINING OF ALL KITCHEN PERSONNEL WITHIN HIS/HER AREA. * DEVELOP MENUS WITH EXECUTIVE CHEF * CONDUCT DAILY BRIEFINGS AND MONTHLY COMMUNICATION MEETING WITH THE TEAM * KEEP PERFORMANCE LOG UP-TO-DATE & CONDUCT PERFORMANCE REVIEWS * PREPARE FOOD REQUISITIONS, PREPARES DAILY WORK ORDERS FOR THE KITCHEN CREW. * SCHEDULES PEOPLE ACCORDING TO NEEDS. * DISPLAYED LEVEL OF JOB KNOWLEDGE, EFFECTIVENESS AND EFFICIENCY. * SEES THAT ALL STANDARDS ARE FOLLOWED. * BE A TRUE TEAM LEADER BY EXAMPLE, CONTINUALLY EMPHASIZING DAY-TO-DAY COMMUNICATION SKILLS AND COMMITMENT TO THE HOTEL CASA DEL MAR SERVICE TO OUR GUESTS. * NEED TO HAVE ENOUGH FLEXIBILITY TO RESPOND TO ANY CALLS FROM HOTEL, ANY DAYS, ANY HOUR. * BE TOTALLY ACCOUNTABLE AND RESPONSIBLE FOR THE RESTAURANT KITCHEN * ASSIST IN ACHIEVING BUDGETED COST OF FOOD THROUGH PROPER UTILIZATION OF PRODUCTS, PROPER ORDERING OF FOOD, PROPER STORAGE OF FOOD AND CONTROLLING WASTE.
* CONTROL DAILY PAYROLL
* MAINTAIN LABOR COST AND PRODUCTIVITY. * CONDUCT DAILY BRIEFINGS AND MONTHLY COMMUNICATION MEETINGS.
* KEEP TEAM FOCUSED, ENERGIZED AND MOTIVATED
* TRAIN AND DEVELOP KITCHEN EMPLOYEES * ENSURE THAT ALL EQUIPMENT IS IN GOOD AND SAFE CONDITION.
* ENSURE THAT GENERAL WORKING AREA IS KEPT CLEAN AND SANITARY AT ALL TIMES.
* ENFORCE HEALTH AND HYGIENE REGULATIONS.
MUST CHECK THE MAINTENANCE OF KITCHEN EQUIPMENT AND REPORT ANY DAMAGES TO THE MAINTENANCE IMMEDIATELY
