Position Description:
PASTRY CHEF
Halekulani is currently seeking a highly skilled and passionate Pastry Chef to lead our pastry and bake shop team (approximately 15 staff members) in a full-service 24/7 bake shop operation. The candidate is required to have a proven background and to have worked in a high end pastry kitchen. He/she must have the ability to successfully lead a vibrant team as well as thorough knowledge of sugar and chocolate work, in-house baking of breads, breakfast pastries, cake decoration and plated desserts for multiple restaurants and banquet facilities.
Proven experience in budgeting, labor and food cost control is essential.
Qualifications: Minimum 5 years of pastry experience with thorough knowledge of bread, pastry, sugar work, chocolate work and cake decorating in a similar position at a luxury hotel and/or operation with multiple restaurants and banquets. Culinary Arts degree or equivalent preferred.
Responsibilities: -Provide warm, sincere and engaging service that ensures guests feel valued. -Anticipate guests needs with thoughtful and personal touches. -Be guided by Halekulani's core values: respect, integrity, teamwork and empowerment. -Manage the day-to-day operations of the bake shop -Maintain close communication with the team -Executive short and long term goals for the bake shop -Achieve profitability, costs and flow through -Provide practical training -Maintain a safe, clean and spotless kitchen -Prepare, present and continously improve upon innovative, high quality pastries, desserts and baked goods -Ensure food production requirements are met and food is handled and stored safely according with the established health codes and standards set out by the Executive Chef, state and federal regulatory agencies -Review daily production sheets and determine qualities and production schedule to prepare the necessary food items in accordance with established standards which will exceed guest's expectations. -Adhere to all standard recipes in order to maintain consistency and ensure all standards are met and followed. -Complete advance mis en place in a timely fashion to ensure there is no disruption in guest service. -Seek opportunities to increase food revenue, decrease kitchen expenses and maximize departmental productivity without compromising guest's satisfaction.
