Position Description:
Position Expectations: This position has overall responsibility for planning, preparing and executing all portioning, ordering and inventory of meats and fish in accordance with standards and plating guide specifications as well as maintaining organization, cleanliness and sanitation of work areas and equipment To serve the guests in a Five Star manner. Assure highest quality of the Department by working in an efficient and conscious manner, as well as, maintaining and developing the highest service standards possible.
Essential Job Functions/Responsibilities:
?Follow proper payroll and uniform procedures. ?Read all banquet function sheets to ascertain types and quantities of fish, meat and poultry to order. ?Gather and handle safely all equipment used in the butcher shop. ?Inspect the refrigerators and utilize that which is still there. ?Prepare the mise en place for each outlet and banquets ensuring to line all pans first. ?Deliver and stock all mise en place in the proper location in a timely manner. ?Prepare the orders with the Executive Chef or Executive Sous Chef on a regular basis. ?Recieve and inspect all meat, poultry and seafood arriving at the hotel. ?Perform yield tests when necessary. ?Keep a running inventory. ?Ensure a clean, neat and organized work area. ?Handle and report any accident immediately, no matter how minor. ?Perform kosher butchering. ?Certified in food service sanitation. ?Respond properly in any hotel emergency or safety situation. ?Perform other tasks or projects as assigned by hotel management and staff.

Work Environment:
?This is a very fast paced busy environment ?Regular attendance in conformance with the standards, which may be established by The Taj Boston from time-to-time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment. ?Employees may be required to work varying schedules to reflect the business needs of the Hotel. ?Multitasking ?This position is monitored by direct/indirect supervision to insure all unit procedures are adhered to.
