Entry level cooks should be able to do the following:
-Clean and prepare food items for service;
-Cover, label, and date food items for storage;
-Maintain a constantly safe, clean, and sanitary work environment;
-Prepare foods according to recipes and/or house standards;
-Prepare line items in a timely manner;
-Leave workstation surgically clean at the end of shift.
-Commitment to honesty, integrity, safety, professionalism, pride, teamwork, and fun.
-Understand and carry out detailed written or verbal instructions;
-Ability to learn and handle kitchen cutlery efficiently and safely;
-Ability to identify and safely use kitchen equipment and utensils;
-Ability to identify various fruit, vegetables, and herbs;
-Ability to retain information as relayed by Supervisor;
-Ability to work without distraction.
-Follow kitchen grooming standards to the letter
Experienced Cook Requirements:
-Prepares stocks, soups and sauces.
-Makes salads, vinaigrettes and dressings.
-Prepares various hors d'oeuvres and appetizers.
-Preps, trims and portions all required protein items.
-Breaks down whole fishes, shellfish and crustaceans.
-Grills meats to exact specifications.
-Roasts, braises, poaches and sautes foods to exact specifications.
-Stores foods safely using health code standards.
-Assists chef in assembling daily prep lists.
-Communicates effectively with all departments' personnel.
-Reads and updates banquet event orders.
-Executes banquet event orders in a timely manner.
-Assists in supervising other kitchen personnel when needed.
-Assists with quality control.
-Maintains sanitation, health and safety standards.
-Maintains a professional appearance and attitude.
-Helps manage portion controls and food costing.
-Takes care of guests' special dietary needs.
-Reports observed maintenance needs to supervisor.
-Assists in orientation and training of new employees.
-Helps to keep work stations clean, sanitized and organized.
